It looks an order of magnitude smaller than a modern lavender still. (5 tonnes of lavender packed in, steam blown over it, about 50 kg out.)

On the other hand, it is a museum, so it could be an old one, before the days of real mass production.

You were also down in the lavender producing region of France, so I'm going with that option.
